6 x Harvey Beef Eye Fillets
Fresh lime & radish to garnish
For the Salad:
½ small red cabbage, finely sliced
1 continental cucumber, finely sliced
1 carrot, finely sliced
3 spring onions, finely sliced
1 bunch coriander
1 bunch mint
2 tomatoes, deseeded & sliced
1 Pkt crispy fried noodles
For the Dressing:
2 tbsp soy sauce
4 tbsp fresh lime juice
2 tsp Sambal Olek or crushed chilies
1 tsp sesame oil
Pre-heat oven to 160c & a frying pan to very hot, then season eye fillet steaks with salt and pepper and sear with a little oil in the pan for approximately 6 minutes each side, or until it reaches 50c internal using a meat thermometer. Set aside to rest and refrigerate if preparing in advance.
Combine dressing ingredients and salad ingredients in separate bowls.
Finely slice beef fillet and dress generously with half of the salad dressing, allow to marinate for around 10 minutes before serving.
Just before serving toss the rest of the dressing through the salad, and garnish with more fresh lime wedges & herbs.
