Ingredients
1 pack of Harvey Beef Gourmet Selection Parsley and Garlic Burgers
2 red capsicum
1 yellow capsicum
2 zucchini
300g halloumi
Olive oil
Salt and pepper
Lemon wedges to serve
Red pesto dressing
Small jar of red pesto
1 Tbsp Lemon juice and zest
2 Tbsp Chopped fresh herbs (whatever you have to hand)
Serving suggestion
Quick cook brown rice to serve.
To Prepare
If using wooden skewers, soak 8 long skewers in water whilst preparing vegetables
1. Cut each Parsley and Garlic Beef Burger into six pieces each
2. Prepare red and yellow capsicum by slicing into 2 cm squares
3. Slice zucchini into 1cm thick rounds
4. Cube halloumi into 16 pieces
To Assemble
1. Thread each skewer, alternately with beef burger, red capsicum, yellow capsicum, zucchini and halloumi, repeating to have three pieces of beef burger on each skewer.
2. Drizzle with a little olive oil, salt and pepper
3. Pre-heat BBQ grill on medium-high heat
4. Grill skewers for 6-8 minutes without turning, or until burgers and vegetables are cooked and easy to flip. Turn once and continue grilling on the other side to finish cooking. Remove from heat.
5. Meanwhile prepare dressing by mixing together red pesto, lemon zest, lemon juice and chopped herbs.
6. Serve skewers on a bed of brown rice and drizzled with red pesto dressing and lemon wedges.
