Brisket Burger Banh Mi
Ingredients
Pickled carrot, cucumber and coriander salad
Sriracha Mayonnaise
Instructions
Step 1
For pickled salad, in a medium sized bowl add boiling water and caster sugar. Stir until sugar has dissolved. Add vinegar, fish sauce and sea salt, stir again to combine, then set aside to cool. Once cool, add carrot and cucumber, toss to coat and refrigerate until required. Just before serving, drain pickle liquid and toss through coriander, onion and chilli.
Step 2
Halve brioche buns and lightly toast the inside on a dry frying pan over medium high heat. Set aside.
Step 3
Preheat fry pan to medium high heat. Cook burgers 4 minutes each side, or until cooked through.
Step 4
For sriracha mayonnaise, stir together ingredients to combine and set aside.
Step 5
To serve, generously spread the inside of the buns with sriracha mayo, place the grilled brisket burger on the bottom half and top with pickled salad. Serve immediately.
