Brisket Quesadilla

Black Bean and Tomato Salsa

Instructions
Step 1
Prepare salsa by tossing all ingredients together in a medium sized bowl. Allow to sit and marinate while burgers are cooking.
Step 2
Drizzle a little olive oil in a fry pan and cook burgers over medium high heat for 4 minutes each side. Remove from heat and slice each burger into 8 lengths.
Step 3
Pre-heat a sandwich press or frying pan to medium high heat. Drizzle a little oil in a pan if using.
Step 4
To prepare quesadilla, lay tortillas on a plate, scatter a little grated cheese to one half of the tortilla, top with burger slices, scatter 1-2 Tbsp of prepared salsa and finish with a little more grated cheese.
Step 5
Fold tortilla in half, and if using a fry pan, brush the top with a little oil.
Step 6
Place quesadilla into sandwich press/fry pan and cook for 3-4 minutes each side, until golden and cheese has melted.
Step 7
Keep warm whilst preparing remaining quesadillas.
Step 8
Serve topped with remaining salsa and sour cream, guacamole, wedges of lime and a scatter of chilli and coriander leaves.
