Ultimate Loaded Italian Hotdog with Tomato Sugo, Pesto and Melted Bocconcini

Instructions
Step 1
Pre-heat oven grill to 200 °C.
Step 2
Drizzle oil in pan and cook sausages over medium heat for 12-15 minutes, turning occasionally until cooked through.
Step 3
Split Italian rolls lengthwise through the top of the roll, leaving them attached at the base.
Step 4
Opening the rolls, spoon 1-2 tablespoons of tomato sugo onto the rolls. Top with a 3 slices of bocconcini. Add a drizzle of pesto.
Step 5
Load 1 ½ sausages into each roll. Top sausage with a spoon of tomato sugo, bocconcini slices and a drizzle of pesto.
Step 6
Place hotdogs under the grill and cook for 3-4 minutes, until cheese is melted.
Step 7
Remove from oven and finish with fresh rocket.
