BBQ Scotch Fillet With Summer Salad, Medley Tomato, Bocconcini, Grilled Corn & Pesto

Step 1
Remove the steak from the packet, season with salt and pepper, and rub in a little oil. Light the BBQ or heat a grill pan to a high heat.
Step 2
Cut the cherry tomatoes as desired, toss in a little pesto, and drain the Bocconcini.
Step 3
Rub the corn with a little oil and grill for around 10 minutes, turning occasionally.
Step 4
Grill the steaks for 4 minutes on each side, then allow them to rest for 2 minutes.
Step 5
To serve, trim the corn from the cob and arrange with the tomatoes and Bocconcini. Drizzle over with pesto and serve alongside the steak.
