Creamy Sausage & Orecchiette Pasta, Summer Peas, Lemon, Chilli, Capers and Baby Spinach

Step 1
Cook the pasta according to the package instructions, drain, and set aside in a large bowl.
Step 2
Remove the sausages from the package. Make a small cut through the skins and remove the sausage meat from the skins.
Step 3
Add 2 tablespoons of olive oil to a frying pan and heat over medium-high heat. Add the sausage meat and fry, using a wooden spoon to break the meat into chunks. Fry for approximately 5 minutes until golden on the outside.
Step 4
Add the white wine or stock and simmer until reduced by half. Then, add the cream and simmer to reduce by half again.
Step 5
Add the peas, chili, capers, lemon, and baby spinach. Bring to a boil for 30 seconds. Pour over the hot pasta and stir together with Parmesan. Season to taste.
