Cowboy Butter Steak Bites

Steps
  1. Slice 2 Harvey Beef scotch fillet steaks in to thick cubes.
  2. Lightly season all sides with salt, pepper and garlic powder.
  3. Add oil to a pan set over high heat.
  4. Add the steak to the pan and sear in all sides until caramelised.
  5. Remove the seared steak and set aside.
  6. To the same pan add 175g unsalted butter, 4 diced garlic cloves, 1/2 finely diced shallot, 1 tsp red chilli flakes, 1 tbsp thyme, 1 tbsp of dijon mustard and the juice of a lime.
  7. Allow the butter to melt and mix to combine, then lightly season to taste with salt.
  8. Add the steak back in to the pan and toss through the cowboy butter for a further 3 minutes.
  9. Take the pan off the heat and allow to rest for 5 minutes.
  10. Serve the steak bites over white rice with plenty of the cowboy butter spooned over the top.
  11. Garnish with chopped fresh chives and serve 🥰
