Easter Roast Beef
The long weekend is here so why not spend the extra time slow cooking a delicious @harveybeefwa roast. Bolar blade is the perfect cut for slow cooking with a generous amount of fat and a delicious beefy flavour. 1. Trim the Bolar blade of any excess hard fat and silver skin.
2. To a large roasting pan add 1 sliced brown onion, 2 sliced carrots, 1 cup chopped celery and 7-8 garlic cloves.
3. Add mediterranean seasoning and a generous amount of olive oil.- Place the bolar blade on top of the bed of vegetables and poke holes in the top.
4. Apply olive oil to the top and season with more mediterranean seasoning.- Place in to a preheated oven set to 160C for 1.5-2 hours.
5. Once you have a beautiful colour remove from the oven and add 1/2 bottle of quality red wine.
6. Cover tightly with foil and place back in the oven for a further 3 hours.
7. Once the meat has hit an internal temp of 85-90C remove and allow to rest for 30 minutes
8. Place the beef on to a large platter and spoon the roasted vegetables around the outside.
9. Carve the beef in to thin slices on the platter.- Spoon plenty of the delicious gravy from the roasting pan over the top.
10. Garnish with fresh Italian parsley and enjoy. 🤗
