Marry Me Steak

Valentine’s Day is around the corner and what better way to treat your partner than with a rich, saucy @harveybeefwa steak dinner! Whether you want to treat yourself or your partner, this dish is a must-try!

Steps
  1. Trim up the Harvey Beef tenderloin and remove any excess silver skin.
  2. Slice in to thick steaks.
  3. Season both sides generously with quality salt flakes.
  4. Add olive oil to a cast iron pan set over high heat.      
  5. Sear the steaks for 4 minutes on both sides.
  6. Place on a wire rack then in to a preheated oven set to 180C for 6-8 minutes.
  7. Meanwhile in the same pan add 100g butter, finely diced onion, 4 cloves of finely diced garlic, 1 tbsp chopped fresh Italian parsley, 1 punnet of chopped cherry tomatoes.
  8. Allow to soften for 2-3 minutes then add sliced mushrooms, 3/4 cup salt reduced chicken stock, 3/4 cup heavy cream, 1 tbsp thyme and 1 tsp salt.
  9. Turn the heat down to medium and allow to reduce and thicken for 8-10 minutes.
  10. Once the steaks have hit an internal temp of 52C remove and allow to rest.
  11. Slice the steak then serve on a plate alongside air-fried fries.
  12. Spoon a generous serving of the marry me sauce over the top of the steak and serve.
