Steps
- Wrap the Harvey Beef sausages tightly with bacon.
- Apply a generous shake of your favourite barbecue rub.
- Transfer to a wire rack and then into your smoker or BBQ set to roughly 130C for 45 mins.
- Meanwhile prepare the cowboy candy by setting a pot over high heat.
- Add 1.5 cups white sugar, 2/3 cup white vinegar and bring to the boil.
- Reduce to medium heat and add 2 cloves minced garlic, 4 sliced jalapeños and 1-2 sliced red chillis.
- Simmer and allow to thicken for roughly 5 minutes.
- Remove the chillis and garlic and place into a mason jar.
- Bring the liquid back up to the boil and continue stirring until it thickens and sticks to the back of spoon.
- Take off the heat and allow to cool before pouring into the same mason jar with the chillis.
**Leftovers can be stored in the pantry**
- Remove the sausages from the smoker and assemble your hotdogs.
- Add American mustard, smoked sausage and plenty of cowboy candy glaze over the top.
