Candy Cowboy Hot Dogs

Steps
  1. Wrap the Harvey Beef sausages tightly with bacon.
  2. Apply a generous shake of your favourite barbecue rub.
  3. Transfer to a wire rack and then into your smoker or BBQ set to roughly 130C for 45 mins.
  4. Meanwhile prepare the cowboy candy by setting a pot over high heat.
  5. Add 1.5 cups white sugar, 2/3 cup white vinegar and bring to the boil.
  6. Reduce to medium heat and add 2 cloves minced garlic, 4 sliced jalapeños and 1-2 sliced red chillis.
  7. Simmer and allow to thicken for roughly 5 minutes.
  8. Remove the chillis and garlic and place into a mason jar.
  9. Bring the liquid back up to the boil and continue stirring until it thickens and sticks to the back of spoon.
  10. Take off the heat and allow to cool before pouring into the same mason jar with the chillis.

**Leftovers can be stored in the pantry**

  1. Remove the sausages from the smoker and assemble your hotdogs.
  2. Add American mustard, smoked sausage and plenty of cowboy candy glaze over the top.
