Smoked Beef Shins Recipe

Don’t let the size of these beautiful @harveybeefwa beef shins scare you! This recipe is super simple and can be replicated in the oven if needed. Check it out below;

Steps
  1. Trim and remove any excess fat and silver skin from the beef shin.
  2. Apply a generous layer of American mustard to all sides for the binder.
  3. Hit it heavy with your favourite BBQ beef seasoning on all sides.
  4. Place in the smoker upright set to roughly 125c cooking temp for 5 hours.
  5. Once the bark has set remove and place in a large roasting dish.
  6. Pour two cans of your favourite drinking beer to the tray.
  7. Wrap tightly in foil then place back in the smoker for a further 4.5 hours.
  8. Once the beef shin has hit an internal temp of 95C (203F) remove.
  9. Allow to rest for 30 minutes if needed or slowly rest in an esky for 2 hours for maximum tenderness.
  10. Remove the bone then pull in to nice chunks and enjoy. 🤗
