Steak Tartare
Steak Tartare 😍 Back in the kitchen with our take on Steak Tartare - this time using Harvey Beef Tenderloin. Get ready for a flavor explosion that'll leave you craving more.
Steps
- Cut roughly 400g of Harvey Beef Tenderloin in to strips.
- Pass the strips through a mincer, or alternatively finely dice in to small cubes.
- Add ice cubes into a large mixing bowl- Place a smaller mixing bowl inside the larger bowl to keep ingredients cold.
- Add 1 egg yolk, 1 tbsp Dijon mustard, 1 tbsp seeded mustard, 2 tbsp chopped gherkin, 1 tbsp chopped capers, 2 tbsp chopped fresh Italian parsley, 1 tbsp chopped chives.
- Mix well, then slowly add 2 tbsp olive oil until the mixture has emulsified.
- Transfer the minced beef tenderloin in to the bowl, season with salt and pepper, then mix well.
- Place in to a ring mould on a platter to create a circle.
- Add potato chips to the side of the steak tartare for dipping
- Top with an egg yolk then season.🍽️
- Dip with the chips and ENJOY!
