Steps
- Remove the Harvey Beef WA Roast with Smoked Paprika and Garlic from the packaging.
- If you want to pack it with flavour add more SPG to all sides.
- Place in the smoker set to 140C and smoked for roughly 3 hours.
**If using an oven preheat to 160C.**
- Once the beef has a beautiful colour remove and place into a foil tray or oven safe dish.
- Add a bottle of your favourite beer over the top then cover tightly with foil.
- Place back into the smoker or oven at the same temperature for a further 3-4 hours.
- Once the beef has hit an internal temp of 93C and is tender remove and allow to rest for 30 minutes.
- Remove the netting from the beef and pull into chunks.
- For the toasties slice brioche bread into thick slices and preheat the pan.
- Add a tsp of butter and allow to melt.
- Toast the brioche then assemble on the pan with pulled beef, pickles, spicy mayo and a good sprinkle of Parmesan cheese.
- Place the toasted brioche on top and grill until the cheese has melted.
