Beef Bruschetta

Steps
  1. Slice the sausages down the middle and remove the meat.
  2. Add olive oil to the Weber Q set to high.
  3. Place the sausages on the grill and chop up with a metal spatula.
  4. Allow to cook for 3-4 minutes until the meat starts to caramelize slightly.
  5. Add 1 tbsp fennel seeds, 1 tsp of salt flakes and 1 tsp black pepper and mix.
  6. Close the lid and cook for a further 3-4 minutes.
  7. Meanwhile chop 1 punnet of cherry tomato’s, 1/4 red onion and 2 tbsp of fresh basil.
  8. Place in to a small mixing bowl then add 1 tsp olive oil, 1/2 tsp salt and 1 tbsp balsamic glaze.
  9. Mix well and then set aside.- Add 1/2 cup red wine over the top of the sausage mince and cook for a further 2 minutes until nice and crispy.
  10. Remove and allow to slightly cool.- Slice fresh Italian bread and quickly grill on the barbecue until toasted.
  11. Place a generous serving of the bruschetta mix on top of the toasted bread.
  12. Layer the crispy sausage mix on top of the bruschetta mix.
  13. Garnish with chopped fresh basil to finish and enjoy 😊
