NY Steakhouse T-bone
NY Steakhouse T-Bone with a delicious compound butter. We can honestly say this is one of the best ways to enjoy this delicious cut of @harveybeefwa . Loaded with flavour and colour, this is a must-try!
Steps
- Season the T-bone steak with plenty of salt on all sides, including the fat cap.
- Slice an onion in to thirds and place straight on the BBQ set to high.
- Place the steak in the middle of the BBQ and grill for 10 minutes.
- Meanwhile prepare the compound butter in a medium bowl.Combine 3 finely diced garlic cloves, 1/2 a finely diced shallot, 1 finely diced red chilli, chopped fresh Italian parsley, 100g unsalted softened butter and the zest of a lemon.
- Tightly roll up the mixed butter with baking paper and place in the fridge to set.
- Flip the steak and grill for a further 10 minutes.
- Char up the fat cap then remove along with the grilled onion slices.
- Slice the porterhouse and fillet off the t-bone, then slice on an angle.
- Preheat a cast iron pan in the BBQ still set to high.
- Spray the cast iron pan with olive oil then place the steak back in the pan.
- Add the grilled onion to the pan then add slices of the set compound butter on top of the steak.
- Place the hot pan back in the BBQ and close the lid until the butter has melted.
- Remove and season with salt then serve in the sizzling hot pan
